Preheat air fryer at 400 degrees for 5 minutes. Meanwhile, squeeze excess water from tofu and cut into large cubes.
In a medium-sized bowl, toss tofu cubes in potato starch to coat evenly.
Once air fryer has preheated, spray your air fryer basket with nonstick cooking spray before adding in tofu and cooking at 390 degrees for 12 minutes. Shake tofu halfway through, at the 6 minute mark.
While tofu is cooking, chop your green onions and shred your daikon radish.
In a sauce pan over medium-low heat, combine dashi stock, soy sauce, and mirin. Stir to combine, until heated through; approximately 5 minutes.
To serve, place tofu in a bowl and top with 1-2 ladles of tsuyu (dashi/soy sauce/mirin mixture) along with green onion, daikon radish, shichimi togarashi (if using), and bonito flakes (or panko crumbs).
