You all know how much I love a therapy cooking session, but I’ll be honest, most days I just need something quick to throw together! This 10-minute buttery artichoke pasta hits the spot when you’re looking to make something in a pinch. The flavors are light and simple so you won’t have to worry about eating a heavy, unhealthy meal, and it’s satisfying enough to make you feel like you just cooked a gourmet dish (but without all the effort). I typically make this late at night after I’ve mustered up the energy to make dinner, or for a super quick mid-day lunch between Zoom meetings.
10-Minute Buttery Artichoke Pasta
Ingredients
- 1.25 cups Pasta (of choice)
- 3 tbsp Butter
- 1/2 Lemon (squeezed)
- 1 tbsp Fresh Parsley
- 1/4 tsp Dried Parsley
- 1/4 tsp Dried Oregano
- 1/2 tsp Dried Basil
- 1 tbsp Pasta Water
- 1 pinch Diamond Crystal Kosher Salt
- 1 pinch Black Pepper
- 4-5 Marinated Artichoke Hearts (from can)
- Parmesan Cheese (optional, for topping)
Instructions
- Start by adding pasta to boiling water over high heat with a sprinkle of kosher salt.
- Meanwhile, melt butter over medium heat then add garlic, fresh parsley, and a pinch of kosher salt. Sauté until fragrant, making sure not to burn the butter.
- Then, turn heat to medium low and add a squeeze of 1/2 a lemon plus 1 tbsp of pasta water (from your currently-boiling pasta).
- Add in dried oregano, basil, and parsley to the melted butter mixture with a pinch of kosher salt and pepper. Stir until well-combined before turning off heat.
- Once pasta is al dente, strain and quickly rinse under cold water. Then, add to pan with butter mixture and toss to coat.
- Add in 4-5 marinated artichoke hearts before serving with a sprinkle of shredded parmesan cheese.
