I am one of those people who grew up loving artichokes as a kid, then decided to hate them as a teenager, and nervously tried them again as an adult. I’m not sure exactly why my dramatic teenage-self ever ostracized these tender green veggies, but alas, I’ve come to absolutely love them “again” as an adult, especially as of recent.

I’ve found artichokes, particularly the hearts, to be quite versatile – I’ve thrown them on top of pizzas, as a side dish for steaks and chicken, and even as a snack right out of the jar. There’s something so mild yet flavorful about these members of the aster family, that I think they deserve more credit than they’re often given.

I believe the concept for crispy artichoke hearts gained a bit of popularity on TikTok, but being the millenial that I am, I can neither confirm nor deny this fact. All I know for sure is, this side dish is SO easy to make and will give you that veggie-but-not feeling that satisfies any salty-herby craving while adding a little green to your dish.

Crispy Artichoke Hearts

Ingredients

  • 2 cans Artichoke Hearts
  • 1 tbsp Olive Oil
  • 1/2 tsp Herbes de Provence
  • 1/2 tsp 21 Seasoning Salute
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Garlic Salt
  • 1/4 tsp Pepper
  • 1 tbsp Mike's Hot Honey (optional)

Equipment

  • Air Fryer

Instructions

  • Rinse and drain your artichokes. Pat dry with a paper towel and squeeze out as much water as you can before placing in a small bowl.
  • Drizzle with olive oil, then season with salt, pepper, herbs, and spices.
  • Place in the air fryer at 380 degrees for 15-25 minutes depending on how crispy you want them.
  • Optional: add a drizzle of hot honey for a sweet and spicy kick.
