Summer is heating up, and so is the barbecue! One of our favorite things to do in the summer is to head out to the river and lake for long, hot days under the sun. When it comes to food, these weekends consist of plenty of grilling, which generally includes veggies, steak, and my favorite: shrimp. I recently stumbled upon Challenge Butter Seasoned Snack Spreads, which create an easy way to flavor anything you put on the grill without needing to bring butter and a bunch of different spices on the road.
As soon as I saw the everything flavored snack spread, I knew I wanted to slather it all over some shrimp! Thus, my Everything Butter Grilled Shrimp were born, and boy are they flavorful. These ready-for-the-grill shrimp are made with three simple ingredients: Challenge Butter everything flavor Seasoned Snack Spreads for a seasoned, buttery base plus chives and chopped garlic. The best part? I love using the leftover butter to make an aioli dip for the shrimp so the ingredients get to shine in different formats.
Everything Butter Grilled Shrimp
Ingredients
- 2 lbs Raw Shrimp (peeled and deveined)
- 1/2 cup Challenge Butter Everything Flavor Seasoned Snack Spread
- 3 tbsp Fresh Chives
- 4 cloves Garlic
- Pinch of Kosher Salt
- Pinch of Black Pepper
- 2 tbsp Vegan Mayonnaise
- 2 tbsp Dijon Mustard

- Large Stainless Steel Skewers
Instructions
- Peel and devein shrimp, then rinse and pat dry. Set aside.
- Finely chop chives and garlic, then add to a a small saucepan over low heat with Seasoned Snack Spread, salt, and pepper.
- Stir gently until butter has melted and ingredients are well-combined.
- Add butter mixture to shrimp and let sit for 5-10 minutes while you heat up your grill to 350 degrees.
- Place shrimp on stainless steel skewers, sliding center of shrimp through the skewer and spacing them out evenly.
- Grill shrimp until opaque; approximately 2-3 minutes per side. Be careful not to overcook or the shrimp will be chewy.
- Remove from grill and brush one more layer of seasoned garlic butter over top before serving.
- To make aioli, add mayonnaise and dijon mustard to a bowl with the leftover seasoned garlic butter. Whisk to combine.
