When I was a baby, my mom would take me to the strawberry fields to pick fresh strawberries in the summer heat. She would sneak the occasional strawberry for me to munch on while she filled her basket, and I’m convinced this is where my undying love for strawberries began. There’s something so satisfying about the ripest, juiciest strawberry picked fresh from the earth – it really makes all the difference!

You may not believe me when I say the inspiration for this quick and easy recipe came from a photo a saw on the side of a produce truck. Yep – I’m telling you guys, you can literally find inspiration for meals anywhere. The produce truck whizzed by me on the freeway so quickly, but not before I caught sight of the strawberries and burrata piled high with a drizzle of olive oil. I wanted to jazz things up a bit, so I decided to add basil and pesto to the mix, and voilá, my strawberry basil burrata salad was born.

Strawberry Basil Burrata Salad

Ingredients

  • 2 cups Fresh Strawberries (sliced)
  • 8 oz Fresh Burrata
  • 3 tbsp Pesto (recipe for homemade pesto below, or use store-bought)
  • Olive Oil (for topping)
  • Fresh Basil (for topping)
  • Fleur de Sel (for topping)

For Homemade Pesto

  • 1 cup Basil
  • 1/4 cup Sunflower Seeds (or Pine Nuts)
  • 3 cloves Garlic
  • 1/3 cup Olive Oil
  • 1/3 cup Parmesan Cheese (I used vegan parmesan)
  • 1/2 tsp Diamond Crystal Kosher Salt
  • 1/4 tsp Black Pepper
  • 3 tbsp Sherry Vinegar (or juice from 1/2 lemon)

Instructions

  • If making homemade pesto, combine all ingredients into a high-speed blender and combine until smooth. Adjust taste as necessary by adding salt, lemon, or basil. Set aside.
  • Slice strawberries in quarters and arrange on a large serving platter.
  • Gently break apart the burrata, careful to keep the filling in tact as much as possible. Arrange on large serving platter among strawberries.
  • Break apart the fresh basil and sprinkle over top of strawberries and burrata.
  • Drizzle olive oil on top of strawberries, burrata, and basil. Then, drizzle pesto and sprinkle with a pinch of fleur de sel, if desired, before serving.
